- Altitude of 400m above sea level
- Volcanic porphyry soils that originated from the explosion of a supervolcano 280 million years ago
- The Erbaluce is hand harvested in two separate passes in September
- Cold maceration takes place for 48 hours followed by static decantation
- Controlled temperature fermentation for about 20 days
- Aging on the lees until March in inert containers followed by bottling in the Spring
- Approximately 100 cs produced for the first vintage
