Metodo Classico Special Cuvée Pas Dosé, Contratto
95% Pinot Noir and 5% Chardonnay from Piemonte vineyards that sit at 500 meters above sea level. Fermentation takes place utilizing indigenous yeast, followed by aging in stainless steel for the Pinot Noir, while the Chardonnay ages in French oak for 7 months prior to bottling. Secondary fermentation then occurs using, once again, all indigenous yeast. The wine spends 7 years on the lees prior to disgorgement.
