  • Indigenous yeast fermentation and maceration on the skins for approximately 40 days
  • Natural malolactic fermentation in French barrels coopered expressively for Sottimano by Francois Frères in Burgundy
  • Remains in barrel for approximately 24 months, half of this time on its lees
  • 10-15% new barrels used for aging, the remaining barrels have previously been used up to 4 times
  • No filtering and no fining prior to bottling
  • 650 cases produced annually

"Intense aromas of iris mingle with fresh cranberry, ground clove and camphor on the fabulous Cottà from Sottimano. Focused and elegantly structured, the delicious, balanced palate features juicy red cherry, crushed raspberry, star anise and saline alongside vibrant acidity and firm, fine-grained tannins. "The 2021 Barbaresco Cott  is one of the most forward wines in this range, as it so often is. Aromatically expressive and light on its feet, the 2021 delivers tons of flavor intensity, but without excess weight. A return to more traditional winemaking has lightened the Cott  considerably, away from some of the jammier interpretations of the past. I imagine the 2021 will drink well with minimal cellaring."
