The Rosales family abandoned their traditional stone tahona mill in the 1980s, focusing instead on the more efficient roller mill; but the family has recently revived this heritage method of production, reinstalling their tahona (now with a mechanical driving arm, rather than use an animal’s labor to pull the mill), as well as returning to the use of much smaller, and more historical, copper pot alembique stills. The results are phenomenal: rich and complex spirit, balancing peppercorn, cooked agave, and fresh earth punctuated with waves of tropical fruits. Absolutely a benchmark among lowlands (or valles) tequilas.
