Blanco 'Chato', Caballito Cerrero

Caballlito Cerrero has a following amongst Tequila aficionados worldwide, and the true die-hards that visit Guadalajara search high and low for these bottlings. The brand, whose mantra states “El que no necesita Herraduras,” or “the one that does not require horseshoes,” was created in 1950, by Don Alfonso Jimenez Rosales when he separated from Tequila Herradura, a company of which he was a founding partner. In 2018, the family made the decision to cease calling their product tequila in order to respect the agave growing traditions within the Amatitán region, where Caballito Cerrero is made. The Jimenez family maintains absolute respect for a 100% agave product, using only mature agaves from the Amatitán region, including both Blue Weber agave and other Agave angustifolia, just as their ancestors have for fifteen generations.

Tasting Notes

One of the benefits of working outside of the classification of Tequila is having the ability to work with other agave varietals. This “Chato”, which is an unclassified sub-varietal of A. angustifolia, is one of the many different types of agave that were once commonly used in the production of tequila. To our knowledge, this is the first Chato to be imported in the US from the heart of Tequila country.
