  • Produced using 100% estate-grown Azul aka Blue Weber (Agave tequilana) grown at an elevation of 5,400 feet
  • Roasted in brick ovens 36 hours with a 6-hour pre-roast and 6-hour rest

  • Open-air fermented in stainless steel tanks using field-extracted wild yeast and deep well water
  • Distilled twice in copper pot stills
  • Aged for 4 months in ex–bourbon barrels
  • Vegetal chapparal and roasted sweet potato on the nose precede notes of salted vanilla cookie, allspice, and mild chile heat on the palate

One of the most important names in modern tequila, the Vivanco family has been growing agave in Arandas, in the highland plateau of Jalisco, since at least 1929. Over the past century, the family has continued to work in close harmony with the land, becoming widely recognized for the quality of their estate-grown maguey. Maestro Tequilero Sergio Cruz—known to experiment with a variety of yeasts and fermentation methods—produces this expression using field-extracted yeasts procured by scraping agave pencas on his estate. To best preserve the vivacity of the tequila, Cruz ages this expression in third fill ex–bourbon barrels that have been entirely scraped of their char to remove the influence of all carbon filtration.
