  • Maestro Destilador Enrique Fonseca
  • 100% Azul aka Blue Weber (Agave tequilana) matured 5–6 years, grown at elevations over 4,600 feet in Atotonilco El Alto, Jalisco
  • Cooked 24 hours in a low-pressure autoclave with a 6-hour pre-cook and a 6-hour rest
  • Crushed using a screw mill and roller mill
  • Fermented in stainless steel tanks using deep well water and proprietary yeast
  • 90% distilled in a copper column still and 10% distilled in an alembic pot still
  • Aromas of baked apples, cinnamon, cumin, plum and vanilla transition to a warm, savory palate of tapioca, dandelion, thyme, and marigold
  • Aged in uncharred American white oak for 4–6 months
  • Additive free
  • 40% ABV

Cimarrón’s reposado tequila is distilled from the same fully matured, estate-grown hillside agave as the blanco expression, but is aged in uncharred American white oak casks for four to six months. While many tequila producers commonly utilize ex–bourbon casks for maturation, Maestro Destilador Enrique Fonseca prefers uncharred oak to better retain the flavor of the agave. Perfect for a Tommy’s Margarita or a Oaxacan Old Fashioned.
