- Fermented with fibers in stainless steel tanks using rainwater

- Proofed using equal parts rainwater and well water from an onsite well

- Rising pastry dough, spring rain, mint, and roasted agave on the nose precede a velvety palate of spearmint candies, white pepper, and fresh chile

Felipe Camarena’s Destileria El Pandillo is arguably one of the most progressive, sustainable, and highly regarded distilleries in all of tequila. Located in the mountain town of Jesús-María in tequila’s highest-altitude region, the distillery produces tequilas from stressed hillside agave that has been slow roasted and fermented with fibers using captured rainwater. A unique aeration process before bottling oxygenates the tequila, softening sharper aromas and concentrating the rich, roasted agave notes.
