  • Steam roasted for 72 hours in a brick kiln oven
  • Crushed using a small hand-operated roller mill
  • Fermented 96 hours in brick and concrete tanks
  • Distilled twice using a stainless steel pot still with a copper coil
  • Rested for 45 days in 1st- and 2nd-fill ex–Bordeaux wine casks
  • A kiss of oak is apparent but gracefully integrated, with prominent cooked agave and yam notes underscored by subtle vanilla bean, wet clay, nutmeg, stewed currants, and a touch of tobacco leaf… A remarkable experience that pushes the blanco boundary!
