Heady, hard-to-stop-smelling aromas of honeyed orchard fruits, lemon thyme and hibiscus flower culminate in what could be the next great popsicle flavor. "The 2019 Sparkling Riesling, formerly known as the White Springs Farm, presents a varietal nose of white flower, peach and flint. It tightens on the palate, revealing a slightly rubbery reduction. Dosage is 8 grams per liter, woven neatly into the wine's fabric, with no perceptible sweetness. The finish is tense and phenolic—racy yet round. Disgorged in February 2024, the 2019 wine offers a compelling argument for sparkling Riesling. It's a wine of notable texture."
