"Made from traditional Champagne varieties (Chardonnay and Pinot) from the limestone soils of Argetsinger Vineyard, this is an opulent and complex bottling. A honeyed, grilled apple and pear note is brocaded with almond oil and toast. There,s exceptional concentration and acidity here, particularly for its age. A lovely texture is seamlessly integrated with tart apple-y acidity and gentle fizz. Pair with honey-drizzled goat cheese and a fruit platter. Editors, Choice. "

"Ravines's current release is the 2017 Brut, a roughly 50-50 blend of Chardonnay and Pinot Noir with a small dosage of just four grams per liter, disgorged in 2024. Lovely toast and brioche notes mark the nose, joined by some mushroomy, earthy notes and a splash of citrus. It's medium-bodied and creamy-textured on the palate, with a fine bead and a lingering finish. While not inexpensive by regional standards, it represents a fine value in a global context."

"The 2017 Brut, made in méthode champenoise, is a blend of 54% Pinot Noir and 46% Chardonnay from the Argetsinger Vineyard. Disgorged in February 2024, it opens with notes of Bartlett pear, sweet lemon and candied almond. Taut, chalky acidity drives through the long, clean finish. A hint of flint flickers right at the close. Excellent. Dosage is 4 grams per liter."
