Light green and bright in color, with long and conical leaves (pencas) extending from wider bases to extended narrow tips, Lineño is one of the fourteen varieties of Agave angustifolia cultivated by the Partida family. After reaching maturity at about six years of age, the agave’s reproductive stalk (quiote) is cut (capón) to concentrate its sugars for an additional three years before harvesting. The profile tends to run sweet and vegetal, evoking sense memories of autumn strolls and Thanksgiving dinners!
