Making fine sake since 1573, in the 1970s Kikuhime adapted their rich style to a more nuanced Ginjo, but with plenty of bite and structure. They were also a pioneer of the traditional Yamahai method with its deep layers of flavor and bright acidity, as well as exploring the potential of aged sake.
Matsuura Shuzo was founded in 1772 in the mountain town of Yamanaka Onsen, famed for centuries for its hot spring baths and dedicated craftspeople.
