Tequila Cabal

Although Tequila Cabal is relatively young, its founder Everardo Gonzalez began its creation well over a decade ago. That careful patience and exacting approach, which have finally brought this exceptional tequila to market, are some of the core values behind Tequila Cabal. There are very few tequila brands reflecting such extensive attention to detail, and even fewer that remain so accessible.

While Everardo was raised in California, his extended family (including twenty-four uncles and aunts on his father’s side) have been farming agave for over a century. One trunk of that impressive tree, the Montes family, have been agaveros since 1911 and are rightly famous across Jalisco as the first (and largest) cultivator of certified organic agave in the state.

When he set out to create a tequila label of his own, it was the stewardship and traceability the Montes family represented that most inspired Everardo. Tequila Cabal is produced exclusively using estate-grown agave from the Montes family, certified organic and farmed using biodynamic methods. Each label names the specific parcel of their land where the agave was grown, with geographic coordinates, and an abundance of other fine-tuned details including age of the agave, brix level at harvest, average cook and fermentation times, and more. The proprietary yeast that is used to produce Tequila Cabal was propagated in collaboration with a UCLA laboratory, using materials scraped from the leaves of the agave on the family parcels in Jalisco. The specific care which goes into each batch, which are limited by nature, is thoroughly transparent.

Meanwhile, another branch of Everardo’s lineage has long been recognized for their horse husbandry, admired for generations for the calm and gentle temperament of the steeds they raise. Raising such animals is no accident. Everardo likens this process to the time and care invested in the cultivation of agave; in both instances, patience and humility are deeply rewarded. The ethos of Tequila Cabal is rooted in an old proverb: “Righteous is the old man who plants a tree whose shade he will never enjoy.” Ancestors are honored not simply by relying upon their historic traditions, but also by building a conscientious legacy for future generations.
