HISTORY

  • Jean-Francois Gamet started Écume in 2024 as a micro-négoce project where he could further explore his passions and winemaking curiosities outside his day job at Champagne Gamet
  • He reclaimed a tiny old family-cellar at the top of the village of Fleury-La-Rivière where he makes and ages his wines
  • The grapes are sourced from his closest friends who are also some of the top young growers in Champagne

FARMING PRACTICES

  • Works only with growers who farm organically

KEY VINEYARD POINTS

  • For his first set of releases, he has worked with fantastic growers in the villages of Mardeuil and Chamery 1er Cru
  • Mardeuil is a very cold village that is and is all north or west facing
  • Chamery 1er Cru is in the Petite Montagne and is known for having a sandier soil, with real slopes that reach almost 200m altitude. Primarily northeast, east, and southeast facing

WINEMAKING PHILOSOPHY

  • Vinification is done in barrel or glass demijohns
  • All the wines go through malo
  • Only ambient yeast fermentation
  • Very low additions of SO2
  • Crown cap aging for wines aged in barrel, tiré liège for wines aged in glass demijohns
  • Zero dosage on all of the wines
  • All wines are unfined and unfiltered
  • With Écume, Jean-Francois Gamet gets to explore villages and varieties outside of his work at Champagne Gamet, making tiny amounts of incredibly vinous and complex wines from fantastic fruit provided by some of Champagne’s brightest young talent
