- Limited edition organic single malt Scotch whisky produced by Nc’nean [nc•NEE•an] in Drimnin, Scotland (Western Highlands)
- The fifth release in the Quiet Rebels annual series dedicated to the individuals that contribute to Nc’nean’s creation
- Distilled from 100% unpeated organic-certified malted Scottish barley
- Twice distilled in copper pot stills
- Aged a minimum of 4 years in STR (shaved, toasted, and re-charred) red wine casks, before being finished for approximately 3 weeks in Innis & Gunn oatmeal stout casks that previously held Nc’nean whisky; non-age statement
- 6,894 bottles produced
- Ample notes of chocolate brioche and coffee beans on the nose lead to warm bakery tones of malted biscuit, hazelnut, and stewed cherries, punctuated by baking spice. Black cherries, molasses, and roasted oats on the palate lead to a rich, stout-y finish full of fudge and chocolate truffle, with an edge of drying spice.

The Quiet Rebels series, released annually, is typically cask-maturation focused and celebrates the contributions of members of the Nc’nean team by allowing them to create—with the assistance of the master blender—their “dream” whisky expression. Simon Hewitt, the Nc’nean distiller whose personal journey includes hiking both the Appalachian Trail in the US and the Te Araroa in New Zealand, is a beer man, so his whiskey receives a lush finish in an ex-Innis & Gunn oatmeal stout cask. For a final flourish, the stout cask previously aged another Nc’nean whisky, thus contributing to the distillery’s conscious cycle of sustainability (Nc’nean is a certified B Corp, after all).

"Each Quiet Rebels release is chosen by a Nc™nean team member. This one was selected by distiller and beer fanatic Simon Hewitt. It was finished in Innis & Gunn stout casks after an initial maturation in shave-toast-rechar (STR) casks. The nose is enticing, with juicy dark fruits enveloped in coffee and chocolate; think an Americano with a chocolate chip cookie and black cherry muffin. The palate is bold, intense, and moreish, with milk choco- late, black coffee, black pepper, chocolate ganache, and cinnamon stick."

"The Quiet Rebels series celebrates the distillery™s employees. The recipe for this release comes from Gordon Wood, the distillery™s manager since its inception. Mouthwatering aromas of wild raspberry, candied citrus peel, plum, apple, and coriander seed. A glossy texture with strawberry, baked orange, creamy chocolate, allspice, crème brûlée, currant, and fig. The STR, sherry, and Rivesaltes casks used for aging the component whiskies create a luxuriously fruity finish with attractive glimpses of red wine."

"The recipe for this whisky made from 100% organic Scottish barley combines STR red wine and bourbon casks, with a maury (a type of vin doux naturel fortified wine from the Languedoc region of France) cask finish. It™s like salivating in a candy store; rhubarb-andcustard sour candies, damson, and lemon zest aromas. Red currant, perky pepperiness, more sour candies, and an intriguing herbal bitterness on the palate, with caraway seeds, dried citrus, pineapple, and red grape.
