- Distilled in 24-inch and 36-inch Vendome copper column stills and a 375-gallon doubler
- Aged a minimum of 5 years in untoasted char #3 new American oak barrels from Speyside Cooperage in Jackson, Ohio
- The nose offers lush notes of vanilla wafer, dried Red Delicious apple, and candied orange, framed by nutmeg and walnut. The palate broadens to cinnamon roll, brown sugar, peanut brittle, and allspice, lengthening into a satisfying pie crust–vanilla ice cream finish, spiced with black pepper.

"All in all, this year,s Castle & Key Restoration Rye is just as good, if not better, than last year,s release. The nose bursts with assertive rye spice and just a touch of black licorice. The mash bill consists of 63 percent rye, 17 percent yellow corn, and 20 percent malted barley, making for a brilliant, balanced palate with an understated oak influence woven throughout. At only $45, this expression offers some of the best bang for your buck in the rye space."
