  • Small batch Kentucky straight bourbon whiskey produced by Preservation Distillery in Bardstown, Kentucky
  • Distilled at Preservation Distillery from an undisclosed wheated mash bill
  • Grains sourced from local farms including Affinity Farms in New Haven, Kentucky
  • Sweet mash fermented in 1000-gallon stainless steel fermenters for 3–5 days using ambient and proprietary yeast
  • Double distilled in copper pot stills
  • Barrel-entry proof of 108–110; proofed with water from the estate’s limestone-fed aquifer
  • Aged a minimum 6 years in new American oak barrels with varying toast and char levels; non-age statement
  • Blended in micro-batches of 1–3 barrels
  • Notes of unsteeped English Breakfast tea, baklava, hickory, and candied almonds with a lingering finish of chicory and sunflower seeds
  • Non-chill filtered; bottled at a cask strength of 55–59% ABV (ABV will vary batch to batch)

Sweet fermented using a purposefully selected wheat variety and dialed-in cask regimen, this whiskey is tailored to be luxurious yet sessionable, and one could easily be forgiven for overlooking its cask strength. A confident portrait of Preservation’s own distilling acumen.
