  • Sweet mash fermented in 1000-gallon stainless steel fermenters for 3–5 days using ambient and proprietary yeast
  • Double distilled in copper pot stills
  • Barrel-entry proof of 110; proofed with water from the estate’s limestone-fed aquifer
  • Aged 7–8 years in new American oak barrels with varying toast and char levels; non-age statement
  • Blended in micro-batches of 1–3 barrels
  • Non-chill filtered; bottled at a cask strength of 56–59% ABV (ABV will vary batch to batch)
