  • Distilled on 2 custom-built 100-liter copper pot stills manufactured by Svarog Sistemi in Slovenia; the juniper is distilled directly in the spirit whereas other botanicals are vapor-distilled in a fine-mesh bag hung inside the still; elderflower is both vapor distilled and distilled with water to capture volatile oils, and the aromatic water is incorporated post-distillation
  • Also added post-distillation: elderflower flavoring sourced from Mr. Fitzpatrick’s Cordials in the United Kingsdom, organic lemon juice, and jasmine aromatic water sourced from Avicenna Ltd in the United Kingdom
  • Water for production is drawn from a borehole on site; water is softened  with salt, deionized, and filtered for finishing
  • Seductively amber in color, this gin offers a brief sensation of wet stone on the nose that is quickly flooded with fresh berries, citrus oil, and honeyed floral elements. The palate is broad, satisfying, and savory, loaded with blue and white flowers, cedar box, piney sap, and a subtle note of clove. The finish is long and satisfying, with berries and citrus oil merging into green pineapple and drying spice.

The lush, exotic flavor spectrum of a summer garden confers instant sipper status on this sensual beauty of a gin that seems destined for a fishbowl goblet filled with ice and premium tonic (cozy nook in an Edinburgh summer garden recommended). For mixing, the blue fruit component suggests an Aviation, and sours would seem like the right place to start, though a one-to-one Martini made with a blanc-style vermouth seems plausible as well.
