Organic Single Malt Scotch Whisky, 'Huntress - Malted Teacake'

• Limited edition organic single malt Scotch whisky produced by Nc’nean in Drimnin, Scotland (Western Highlands)
• The fifth release in Nc’nean’s Huntress series
• 100% unpeated organic-certified Scottish barley
• Fermented between 65 and 114 hours with multiple yeast strains including Anchor, Fermentis, and Dubbel Trouble, a strain typically used in Belgian ale production
• Twice distilled in copper pot stills
• Aged in a combination of shaved, toasted, and re-charred (STR) red wine casks (50%), ex-bourbon barrels (48%), and ex-Oloroso sherry casks (2%); non-age statement
• Casks filled between August 2017 and September 2022; bottled in January 2026
• 4500 bottles produced; 630 available in the US
• On the nose, notes of warm cake, marshmallow, and fig jam are accented with soft oak tones, citrus, and red berries. The palate expands to cake crumb and fig jam, kept in check by bright citrus and fresh orchard fruits. The parade of flavors fades slowly at the finish, ending with an impression of oak, nutmeg, and faint citrus.

Nc’nean’s infectiously energetic approach to whisky making offers a nod to the past in this fifth release from the experimental Huntress series. Ever in search of coaxing new flavors from the fermentation stage of production, the distilling team used a Belgian brewer’s yeast (Dubbel Trouble) that yielded the richer, more malty and cake-like flavors associated with a much older style of Scotch whisky making. Pairing this yeast type with more traditional strains allowed Nc’nean to produce a spirit that is, on the one hand, bright and fruity, and on the other, chewy and rich.
