Shinkame has been making fine sake in rural Saitama since 1848, and in 1987 made history as the first sake brewery since World War to exclusively produce Junmai sake: premium sake without the use of distilled alcohol. At the time they bucked the industry trend of producing more and more highly polished Ginjo and Daiginjo sake with floral aromas, and concentrated entirely on “kanzake”, sake meant to be enjoyed warm. It has built them a loyal following from both sake connoisseurs and patrons of local pubs, where it is enjoyed with the hearty mountain cuisine of Saitama.
