• Flashing copper in the glass, this whisky opens with candy shop notes of juicy orange gum drops that lead to soft cereal tones and a hint of barrel followed by a suggestion of cotton candy. There’s a soothing toffee warmth on the palate—reinforced by mature, handsomely integrated proof—which further evokes apple pie, toasted hazelnuts, and freshly baked brown bread. The finish is soft and warm as well, with a lingering gentle pepperiness and echoes of those orange gum drops from the nose.

Shuttered in 1993, Cambus was initially founded in 1806 as a conventional malt distillery. By 1836, it had been equipped with a pair of Robert Stein continuous column stills (an early precursor to the Coffey still) and was producing what it would become known for: grain whisky. One of the six Lowland grain distilleries that combined in 1877 to form Distillers Company Limited (DCL, which is today, Diageo; the dismantled distillery now houses Diageo’s cooperage), Cambus came to be known chiefly for its role in the “What is Whisky” trials at the turn of the last century. History is worth knowing because vanishing history is what’s inside the bottle: a chance to enjoy a 36-year-old whisky from a closed, lost distillery.
