"Soter is the bar against which I judge all other brut rosés made in the Willamette Valley. What™s not to love about a set of aromas that includes peach, brioche, white chocolate, and wet slate? The wine™s trademark energetic acidity helps to frame tangy flavors like quince and wild strawberries, along with a trace of saline. The 2021 blend of 80% Pinot Noir and 20% Chardonnay was disgorged in May 2025, after three-and-a-half years en tirage. "A pioneer in Oregon bubbly, Soter has been making traditional-method sparkling wines since its first vintage in 1997. The estate™s Mineral Springs Ranch " a 250-acre biodynamic farm with 50 acres of Chardonnay and Pinot Noir planted on ancient marine soils " is the perfect source for the winery™s brut rosé. This cuvée is fermented in a mix of stainless steel and neutral oak and aged for three and a half years on the lees. It™s floral on the nose, with aromas of jasmine flowers and raspberry jam, and the palate brings soft red berry notes with touches of pastry dough. A really delicious domestic sparkling wine."

"This pink sparkling wine is 81% Pinot Noir, 19% Chardonnay and 100% satisfying. The show begins with energetic bubbles delivering aromas of raspberry sorbet and fresh peach slices served on a stroopwafel. "An elegant rosé from the Mineral Springs site and the wonderfully cool 2019 vintage. Persistent mousse and a wonderfully salmon-tinged hue introduce a sparkling rosé that offers decorative floral aromatics, savoury dried lavender and sweet orange blossom intertwined. There's a hint of almond pastry cream and toasted brioche. The palate has a tremendous balance; a sweet orange cream is punctuated with piquant tones of blood orange and subtle spice."

"The 2019 Brut Rosš Mineral Springs is intense, with a burst of white smoke, dusty sage and dried strawberries launching from the glass. Soothingly round and supple, its saline-tinged bubbles fade quickly to reveal crisp white cherry and hints of citrus. It tapers off with medium length and subtle tension, leaving a slowly fading mineral tinge. Four grams per liter of dosage."

"Medium salmon in colour. Dried strawberries and orange rind on the nose. The front and the middle of this wine are pure texture with broad richness of fruit " but the point seems to be in its lengthy finish, driven by marmalade, a tart burst of lemon and a lick of caramelised brioche. (SCJ)"
