• “Ostréa” means oysters, which are resembled by the limestone stones in the vineyards
• Vineyards are isolated, surrounded by forest, meaning an organic farming oasis
• 25+ year old vines
• Indigenous yeast
• Fermented and aged in stainless steel for 18 months
