Tasting Notes

A truly landmark release from Real Minero, this is the first batch of 100% Agave tequilana the family has ever released. Though the species is of course most associated with tequila—being the only variety of agave allowed by the Tequila D.O.—it actually evolved as a subspecies of Agave angustifolia, today the most common variety used to produce mezcal in Oaxaca. Rarely distilled in Southern Mexico, Tequilana (or Azul) has seen a steady increase in production among traditional mezcaleros in recent decades, due in part to its increase in broad cultivation in the wake of tequila’s meteoric rise. Unpacking the significant differences between Tequilana distilled in modern tequila production versus traditional mezcal is a thrill for even the most seasoned agave geeks. The depth of that exploration is magnified exponentially through the lens of Real Minero’s historic distillation methods and unique palenque. Cooked in an earthen oven, milled entirely by hand using heavy wooden mallets, fermented in open pine tanks, and distilled twice using traditional clay pot stills, this powerful expression (54% ABV) of the most famous agave species in the world is rich with notes of white pepper, honeycomb, milk chocolate, damp earth, roasted tomato, celery salt, with a faint whisper of lobster bisque and a flurry of sheep’s wool.
