• 100% Azul aka Blue Weber (Agave tequilana) matured 6–8 years
• Cooked 20 hours in a high-pressure autoclave
• Crushed using a roller mill
• Open fermented in stainless steel tanks for 72–80 hours using deep well water, proprietary yeast, and breadmaking yeast
• Double distilled in stainless steel pot stills
• Delightful notes of hazelnut, kiwi, white pepper, olive brine, pine tar, modeling clay, and subtle nopales, finishing with burnt marshmallow (and the stick it was roasted on)! A treat, to be sure…
