- 100% estate-grown organic Azul aka Blue Weber (Agave tequilana) matured 7 years
- Cooked for an average of 26 hours in 24-ton brick ovens
- Crushed using a roller mill
- Open fermented in stainless steel tanks for 46 hours using deep well water with proprietary yeast and ambient yeasts
- Double distilled in pot stills; the first distillation in a stainless steel pot still and the second in a copper pot still
- Aged 28 months in a single ex-Willett sour mash bourbon barrel

Hand selected by Skurnik for the New York market, this unique release was aged over two years, exclusively in an ex-sour mash bourbon barrel from our friends at Willett, and bottled at an approachable but unflinching 100-proof. In reference to NYC’s beloved Lady Liberty, this special edition “horsehead” bottling evokes the patina of the statue’s copper sheeting, with a clear window near the base where the tequila itself lends its color in place of the original copper’s hue. Leather labeling and necktag adornments complete this exceedingly elegant package. But nothing compares to the generous spirit it contains!
As befits the Ellis Island icon, a portion of the proceeds from Cabal Añejo “Lady Liberty” sales will be donated to the New York Immigration Coalition. “Give me your tired, your poor / Your huddled masses yearning to breathe free”!
