After having previously distilled Cabal at the Montes family’s original fábrica, Las Americas (NOM 1480), all batches are now produced at Destiladora La Roca (NOM 1646), helmed by the younger generation of the Montes clan. While the first Añejo to hit the Skurnik warehouses was in their notorious “horsehead” bottle, a limited edition celebrating their final batch from Las Americas, Cabal Añejo  moving forward will be bottled in their alternative “charro” bottle style, aligned with the rest of their core lineup. Each Añejo release features a detailed and specific aging regimen using barrels from revered whiskey distilleries along with other cask types, particularly uncharred French oak toasted with ceramic plates.
