  • Cooked in a traditional earthen oven
  • Milled by hand using wood mallets (mazo)
  • Fermented in open-air wooden vats (tinas) made of oak
  • Distilled twice using traditional Filipino-style clay pot stills
  • Wet bark, fresh bricks, petrichor, river moss, damp soil, golden beets, stewed plums, roasted red peppers, guava, sweet potato, a hint of nutmeg
  • 215 liters produced
  • 45.75% ABV (ABV may vary batch to batch)

Distilled in January of 2021, the cool temperatures and stillness of winter facilitated a longer fermentation, favoring bold minerality and strong, grassy aromas. Unusual conditions for the production of mezcal in the region (long cold fermentation, the use of clay pot stills) have made this a distinctly different experience of Miahuatlán tepextate than we’re used to. The characteristic fresh fruits and bright tropicalia of the region are present, but boldly preceded by a complex array of rich earth tones and dense texture.
