- Mash bill of 79% corn, 7% rye, and 14% malted barley
- Produced with limestone-filtered, spring-fed water from the distillery estate
- Sour mash fermented in stainless steel for approximately 3–5 days using a proprietary yeast strain
- Twice distilled using a column still made of copper and stainless steel and a Vendome copper pot still modeled after Willett’s original, patented pot still
- Aged a minimum 4 years in new, char #4 American oak barrels from Independent Stave Company’s Kentucky cooperage; non-age statement
- A nose of stone fruit, caramel, honeysuckle, and hay leads to a bright, medium-bodied palate of apple pie, black tea, chicory, and sarsaparilla with a silky, moreish finish
- Non-chill filtered; 49% ABV
A legacy 1980s label from the Willett stable, Speakeasy has been re-tooled by Master Distiller Drew Kulsveen to feature a high-corn mash bill created by his grandfather, exclusive to this bottling!
