• Single malt whisky produced by Spirits of Yorkshire in Hunmanby, North Yorkshire, England, using 100% estate-grown barley from co-founder Tom Mellor’s family farm
• Barley is mashed and fermented using chalk-filtered water from beneath the Yorkshire Wolds (a range of open country hills that spans East & North Yorkshire), and distilled on Forsyth copper stills.
• Aged 4 years in a Fino sherry hogshead sourced from Jerez, Spain
• The pot still distillation is both immediately apparent and balanced by the fino sherry cask aging with notes of baked apple, gingerbread, orange zest, white pepper, and raisin on a spicy, robust palate which shows lingering notes of passion fruit and apricot

Filey Bay Fino Sherry Single Cask Single Malt Whisky is produced by Spirits of Yorkshire in Hunmanby, North Yorkshire, England, using 100% estate-grown barley from co-founder Tom Mellor’s family farm. The homegrown barley is mashed and fermented using chalk-filtered water from beneath the Yorkshire Wolds (a range of open country hills that spans East & North Yorkshire). This pot-distilled single malt was distilled in the fall of 2017 and aged 4 years in a freshly emptied Fino sherry hogshead sourced from Jerez, Spain. The pot still distillation is both immediately apparent and balanced by the Fino sherry cask aging with notes of baked apple, gingerbread, orange zest, white pepper, and raisin on a spicy, robust palate. Bottled at cask strength without additives or coloring, this limited-edition, US exclusive release is a perfect marriage of Spirit of Yorkshire Distillery’s light, fruity house style and the umami-rich salinity imparted by its sherry cask finish.
