- Harvested at the beginning of October, the bunches are de-stemmed and crushed
- Maceration and spontaneous fermentation take place over one week in stainless steel
- Aging in stainless steel for 9 months and after filtering, an additional 6 months aging in bottle prior to release
- Approximately 267 cases produced annually
