The second in Hana Makgeolli’s line of fruit co-ferments, KINGKANGJU is an unfiltered rice wine and a co-ferment of rice with kumquats. Made over five months from harvest to bottle, KINGKANGJU reflects the patience and seasonality at the heart of Hana’s brewing practice. At 10% ABV, its bright acidity, fruit-forward character, and refreshing profile strikes a balance between the structure and depth of rice and the lifted, vibrant character of fresh fruit.
The balance between rice and fruit is one we have refined through years of brewing and reflects our deep appreciation for the farmers who grow alongside us. Rice provides a structured foundation that lends depth and warmth, while allowing the fruit to remain lifted and refined. The result is a cohesive and layered expression, where the fruit is expressive and intrinsic component of the brew.
KINGKANGJU is crafted as a low ABV, lightly sweet expression. Still, sedimented, and tart, it is lively with the vivid acidity of kumquat and the perfume of its zest.
