Clean, smooth, and gracious: this is the essence of the classic Niigata tanrei-karakuchi “light and dry” style. Subtle nose of melon and ginger, creamy soft texture and prolonged but dry finish. Excellent with steamed clams or light cream sauces like salmon with beurre blanc. Blend of local rice varieties Gohyaku Mangoku, Hokuriku #12 and Koshi Ibuki milled to 60%. Stored at low temperatures for over a year for to develop structure.
