This wine is a blend of 50% Merlot, 40% Cabernet Franc and 10% Cabernet Sauvignon. Christophe Baron has mentioned that the Cabernet Sauvignon has been added to create the backbone of the wine. The wine was aged for 8 months in 30% new French oak prior to bottling.

"A Bordeaux blend that varies by vintage, the 2022 Flying Pig is 48% Merlot, 43% Cabernet Franc, and 9% Cabernet Sauvignon, with only 253 cases made. Evoking Right Bank character in its perfumed aromas and lifted acidity, the tannins are indeed supple and seamless along the medium-bodied palate. A fruit core of deep, rich dark berry and plum are complemented by cedar, lavender, and dried herb. Drink now and for the next 15-20 years."

"The 2022 Flying Pig is impossible to ignore, bursting from the glass with savory notes of flinty stone, grilled herbs, incense, tobacco and wild blueberries. It is silken in feel with juicy acidity and masses of red and blue fruits that envelop the palate, leaving a sensation of mineral-liquid stone. Violets mix with a tart blackberry tinge as edgy tannins resonate through the long and structured yet remarkably fresh finish. This is one of the most balanced and complex vintages of Flying Pig that I have yet tasted. Beautiful stuff."

"Instantly impressive in the glass, the 2021 Flying Pig, made from a blend of 59% Cabernet Franc, 31% Merlot and 10% Cabernet Sauvignon, bursts from the glass with seductive notes of black cherry skin, dusty plums and notes of dried herbs and turned earth. Medium-bodied yet round and succulent, the palate explodes with energy and a beautiful balance between dark fruit skin and earth. A food-friendly, tannic grip holds through the long, lingering, ever-evolving finish that has me coming back for more. The wine rested a year and a half in 30% new and neutral French oak barrels. Just under 2,500 bottles were produced."

Medium to full-bodied, pure, balanced, and elegant on the palate, it has silky tannins and no hard edges. It too has an up-front, approachable style."
