  • 700 meters above sea level with northern exposure
  • Volcanic sandy soils, extremely rich in minerals
  • Harvested by hand during the second half of October
  • (80%) De-stemmed and crushed
  • Maceration and spontaneous fermentation take place over 12 days in used oak
  • Wine is transferred into 500-liter used tonneaux where malolactic fermentation occurs
  • Aging in barrel for about 18 months
  • Refined in bottle for 24 months prior to release
  • Approximately 1,600 cases produced annually
