• Sourced from Nat Bouman’s Wilding Orchards, predominantly Dabbinett (75%) with a bit of Bedan (25%) • This mountaintop orchard at 1,700’ elevation is primarily planted to French bittersweets with a wide spacing and meadow-like ground cover • Practicing organic • Off-dry with mellow acidity, lots of tannins and classic Dabinett aromas • Fermented in neutral barrels with wild yeast and bottled before the primary fermentation finished to capture a slight spritz
