Straight Bourbon Whiskey, Small Batch

• Small batch wheated straight bourbon whiskey produced by Neeley Family Distillery in Sparta, Kentucky
• Vatting of 34 barrels selected by Rebekah Neeley
• Mash bill of 68% corn, 19% wheat, and 13% malted barley
• Open-top sweet mash fermented in cypress vats for 5 days using the family’s proprietary jug yeast (propagated from wild Appalachian yeast)
• Triple copper pot distilled
• Aged 5 years in 25-gallon American oak barrels with a #2 char from Kelvin Cooperage that were air seasoned for 2 years
• 3500 bottles produced in the inaugural batch
• This elegant wheater announces itself with honey, light butterscotch, raspberry jam, and sweet creamed corn. On the palate, nuances of maple syrup and orange peel—plus a light cereal graininess—are framed by mild char and light black pepper spice leading to a dry, prolonged finish.
• Non-chill filtered; 47% ABV

The newest expression from Master Distiller Royce Neeley—and the second blend from Neeley Single Barrel Coordinator Rebekah Neeley—this small batch vatting was inspired by an idea Rebekah had to showcase the bold flavors of legacy Neeley bourbons at a more approachable drinking proof. Making whiskey the right way rather than the easy way is second nature for the Neeleys: Expressive but soft on the palate (and light on the wallet!) this lovely wheater is another jewel in the crown for one of Kentucky’s most exciting under-the-radar distillers.
