• Mash bill of 90% rye and 10% malted barley
• Rye is primarily estate-grown; malted barley sourced locally from Glick Farms
• 7-day closed-top, sweet mash fermentation in stainless steel
• Twice distilled in a Vendome brass and copper pot still
• Aged 4.5 years in 24-month-air-dried, char level 2 Canton Cooperage casks with charred heads
• Red apple skin, candied fennel, fresh dill, and a hint of ash on the nose; a sweet, rounded palate highlights ruby grapefruit, allspice, marshmallow char, and peppermint with orange & lemon peel, dried cherry, and tarragon on the finish
• Non-chill filtered; bottled at a cask strength of 58.85% ABV
