• 75% Nero d’Avola, 25% Vermentino
• Nero d’Avola from Bricarelli Ranch, Ukiah, Mendocino County; head trained vines planted in 2008; dry farmed (non-irrigated) vineyard, farmed with organic principles (no pesticides, herbicides, or synthetic fertilizers); gravelly loam soils.
• Vermentino from The Bench Vineyard, Clements Hills, San Joaquin County; certified organic and biodynamic vineyard; sandy loam soils.
• 100% native yeast; fermented completely dry and racked off heavier lees at the end of fermentation
• Aged in neutral vessels for 6 months before bottling
• Unfined and unfiltered (sediment expected)
• Free SO2 < 2 mg/L (Total SO2 10 mg/L)
• 12% abv
