The Vieyra family cultivates Agave cupreata in the temperate highlands above Morelia in a nursery maintained by Emilio’s mother, Doña Delia, before it is transplanted to the steep, pine forest slopes around the vinata. Distillation takes place slowly, over a prolonged period of around 36 hours, using a large Filipino-style still made from a copper pot below and a tapered cylinder above made from slats of pine and fir trees.
