  • Fermentation in a mix of open-top tanks (both whole cluster and destemmed) and closed tanks (true carbonic maceration)

  • Pressed off skins early and “went to barrel sweet” to preserve freshness
  • Aged 10 months in a mix of neutral oak barrels and stainless steel
  • Bottled unfined and unfiltered
