Ripe cherries are harvested in June, mashed, and immediately placed in stainless steel for a 12-day fermentation at 19 °Celsius (66 °F). Distilled twice in a Christian Carl copper pot still and rested for 3 years in stainless steel, it takes 10.5 kg (over 23 lbs) of fresh cherries to make one liter of this eau-de-vie. Red cherry, watermelon rind, rose, and nutmeg are prominently displayed from the nose through the palate with the addition of a bit of marzipan confection on a surprisingly vibrant and spritely, fruity, floral finish. 41.5% ABV.
