Chardonnay 'Campbell Ranch'

100% Chardonnay • Old Wente selection planted in 1999 by Ulises Valdez on Goldridge Soil in a block of Campbell • All clusters are crushed before pressing to tank • Juice is encouraged to hyper oxidize for 24 hours before going into barrel • Native yeast fermentation • Aged in 20% new 500 liter puncheons and is then racked into stainless steel just before next harvest • Bottled 6 months later after 18 months of elevage • 13% ABV • 280 cases produced
