Finished in toasted barrels from Seguin Moreau and casks from Canton Cooperage that were air-dried for 5 years to lower tannin levels and accentuate the wood’s vanillins, this “Double Oak” expression is a magnificently balanced whiskey which doubles down on all the best qualities of American oak without the bitter drawback.

Tasting Notes

This double-oaked whiskey from the Carl T. Bourbon range is produced by the Starlight Distillery in Starlight, Indiana. Comprised primarily of two distinct mash bills—a 3-grain mash bill of 60% corn, 20% rye, 20% malted barley and a 4-grain mash bill of 51% corn, 20% rye, 20% malted barley, 9% wheat—the majority of the non-GMO corn and rye is estate-grown, while the wheat and malted barley are locally sourced.

Sweet mash fermented for an average of 7 days in stainless steel and twice distilled in a 500-liter Vendome brass and copper pot still, the bourbon lives up to its namesake, produced in small batches and blended for consistency.

Aged 4 years in new American oak and finished for 3–8 months in a combination of new, toasted Seguin Moreau Napa Cooperage barrels and 5-year-air-dried, heavy toast barrels from Canton Cooperage, the resulting whiskey is magnificently balanced, doubling down on all the best qualities of American oak without the tannic astringency. Non-chill filtered; bottled at a cask strength of 53% ABV.
