Bourbon Whiskey, Small Batch Double Oak

• Double-oaked bourbon produced by Starlight Distillery in Starlight, Indiana
• Blend of mash bills including a 3-grain mash bill of 60% corn, 20% rye, 20% malted barley and a 4-grain mash bill of 51% corn, 20% rye, 20% malted barley, 9% wheat
• Produced using estate-grown non-GMO corn, rye, and wheat; malted barley locally sourced
• 7-day closed-top, sweet mash fermentation in stainless steel
• Twice distilled in a Vendome brass and copper pot still
• Aged 4 years in new American oak; finished for 3–8 months in new, toasted Seguin Moreau Napa Cooperage barrels and 5-year-air-dried, heavy toast Canton Cooperage
• Non-chill filtered; bottled at a cask strength of 53% ABV (ABV may vary batch to batch)

Finished in toasted barrels from Seguin Moreau and casks from Canton Cooperage that were air-dried for 5 years to lower tannin levels and accentuate the wood’s vanillins, this “Double Oak” expression is a magnificently balanced whiskey that doubles down on all the best qualities of American oak without the bitter drawback.
