100% St. Laurent • Ricci Vineyard (Sonoma portion of Carneros) • 23+ year old vines • Typical Carneros Soil of Haire clay loam • Hand-harvested • Native yeast fermentation • The grapes were destemmed and macerated for a few hours prior to being gently pressed in a sparkling press cycle. The wine fermented in stainless steel and bottled slightly sweet, to allow for the rest of the fermentation to continue in bottle • The wine was aged 12 months in bottle before being riddled and disgorged • 312 cases produced • 11% ABV
