Ohishi Sakura Cask Whisky is rice whisky that has been fully distilled, matured, and bottled by Ohishi Distillery in Mizukami, Japan. Like all Ohishi whiskies, the Sakura Cask is distilled from a combination of estate-grown and locally sourced malted and unmalted grains, which undergo a 21-day fermentation before being distilled in stainless steel pot stills. The spirit is matured in a combination of ex-brandy and sherry casks before being transferred to locally grown Sakura wood casks for at least 1 year of additional aging. The nose opens with a full-on candied apple bouquet, bursting with caramel, green apple, and roasted peanut. The palate shows honey, cherry, pink peppercorn, and allspice with a confectionary finish of brown sugar, cacao, sea salt, and faint, burnt peanut.
