Single Cask Rum, 'Fiji - South Pacific 2009'

• Aged single cask rum distilled at South Pacific Distilleries in Lautoka, Fiji, and bottled by Holmes Cay
• Distilled in 2009 from 100% molasses in pot stills
• Aged 13 years; fully matured in ex-rum barrels in the UK before being bottled in New York State in 2023
• Crème brûlée on the nose yields to popcorn and toffee on the tongue. Creamy notes of coffee shine through the characteristic bass note in the lingering finish.
• Only two casks released
• No sugar, coloring, or other additives
• Non-chill filtered; 58% ABV

South Pacific Distilleries, the last remaining distillery in Fiji, produces rum on both pot and column stills, but this limited single cask release was distilled exclusively in pot stills for an unflinching look at the distillery’s character.
